Swiss Istor Standard and Professional Sharpener


General features
  • No pressure necessary
  • Forms no burr on the blade
  • Cutting edges remain sharper for longer

  • Sharpening
    1. Holding the carbide tip at the desired angle (1) draw the concave sharpening edge gently along the blade several times, as shown in the photographs opposite.

    (1) Suggested bevel angles are as follows:

  • Small cutting knives and slicing knives 15°.
  • Butchers' knives, boning knives 15° - 20°
  • Outdoors and general purpose knives 20° - 25°
    When sharpening scissors, secateurs and pruning shears, only sharpen the cutting blade, not the anvil blade.

    Swiss Istor Duplex Sharpener


    The carbide tip on the Duplex Sharpener is used in the same way as the Standard and Professional models (see above).

    In addition, the Duplex Sharpener is equipped with a diamond-coated steel sharpening device that can be used to remove nicks and bumps in a blade. Using it on its flat side, gently grind out nicks and burrs in a rotating or straight motion, holding it at the desired bevel angle. See above for the suggested angles for different uses.
